Production Notes: Distilled through our hybrid still system, this rye retains lift and brightness while gaining texture and depth.Estate-grown winter rye thrives in the short, demanding seasons of the Carson Valley, developing aromatic precursors that evoke lean citrus and candied orange peel rather than black pepper.

Tasting Notes

AROMA: Warm vanilla with orange zest and nutmeg, dried cherry, and aged oak.

PALATE: Sweet vanilla and bright orange zest, crème brûlée with cherry syrup, integrated oak with light baking spice and candied fruits on the finish.

Mash Bill

80% winter rye
10% wheat
10% barley

This mashbill is tailored to showcase the specific flavor development in our winter rye as a result of our growing conditions, where rye leans more aromatic and citrus-forward rather than black pepper.

Distillation & Aging

Our rye runs first through a Headframe continuous stripping still, then through a German-made Christian CARL pot still for precision and control, allowing heavier elements to fall away while preserving the grain’s aromatics. The whiskey ages on-site in a climate-controlled rickhouse, allowing for slow, even extraction. Aged four years in #3 char new American oak.
